Pulling open the heavy door took a little nerve, but the moment Masuda-san greeted us with a gentle smile, the tension left our shoulders. He asks carefully about what you're in the mood for — "something sweet, or something crisp?" — and the drink that follows is as lovely to watch being made as it is to taste.

Even the small talk we let slip at the counter came back with a light, easy reply; alone, and yet the conversation never stopped. At a cover of ¥1,000 and up it's remarkably fair for a bar of this standing, and by the end of the night we understood in our bones why Minami has loved this place for more than 60 years.
